Koz̈hi's fried chicken starts the same way every time — a long brine, a double dredge, a hard fry until the crust shatters. What changes is the finish. We glaze to order in one of two house sauces, brushed on the moment the chicken leaves the oil so the crust stays loud.
Sweet-heat and deeply savoury. Built on Korean fermented chili paste, balanced with a little sugar and acid, it lacquers the crust a glossy red and lingers with a slow, gentle burn. This is the glaze people come back for.
Our nod to South Indian ghee roast — nutty browned butter, black pepper, curry leaf, and dried chili. Rich and aromatic rather than hot, it coats the chicken in toasted spice. Order it alongside the Gochujang and you've got the full Koz̈hi range on one plate.
